SCCM 2012 "Required" Application Deployment Question: How to setup a deployment to start immediately, with no deadline?

I am confusing myself i'm sure, but here's my end goal:

I have a few application packages that I want on EVERY computer in my district (examples: flash, java, shockwave, acrobat reader, office, etc)

I have application packages for these, but how do I set these applications to "deploy" if I want them to start installing immediately on every device in the deployed collection, but with no deadline (if that makes sense)? 

Example, I want "CompA" to grab office 2010 because it's a deployment in "Collection A".  Somehow, office 2013 gets uninstalled, but since there's a current deployment of office 2010 to "Collection A", CompA will report and grab an installation of Office 2013. 

When I set up my deployment of office now (or any other application for that matter), it's hit or miss on if it starts or not.  Like right now, I just deployed Office 2010 to a collection.  I set it as Required...the package is already distributed to the content server, so it should be available immediately, no?  So I did not check "schedule the application to be available at".  On "installation Deadline", I've tried this both ways...of setting the Deadline to the default"as soon as possible after the available time" as well as setting a deadline of 1/1/2014, because I do not want the installation of this software to stop across my network (i'm thinking i'm thinking about this logically wrong, please correct me if I am).  When I set this current deployment of office 2010 with default as listed above, it set the available time AND deadline as 7/31/2013 3:09pm, not RIGHT NOW.  So, I go in and set the start time / deployment time to RIGHT NOW.  Refresh my collection's Machine Policy, and then it shows up as "available after 7/31/2013, Past due - will be installed". 

i'm really confused, and I know i'm not thinking about this logically correct...can someone help me? 

I am pretty sure this is a very fairly simple process, but one that i'm either not being patient enough on or that i'm missing a few key steps...or both
